We work exclusively with small-boat, day-boat fishermen who use line-caught methods rather than destructive netting. This not only ensures the health of the marine ecosystem but also results in significantly higher quality fish. Fish caught this way experience less stress, resulting in better texture and flavor.

One of our proudest partnerships is with the Hokkaido scallop divers, who harvest by hand. This level of care translates directly onto the plate in our Pan-Seared Hokkaido Scallops.
